Instructions
In a medium to large pot, on medium heat, add the olive oil garlic and onion. Cook, stirring, until the onion is translucent.
Add the tomatoes and the stock. Simmer 10 minutes, crush tomatoes with a wooden spoon or potato masher.
Simmer 5 more minutes. Using an immersion blender, purée soup until smooth. You can alternatively use a food processor or blender.
Add the herbs, salt and pepper. Stir, simmer for 5 minutes and then taste. Adjust the seasoning to your liking.
Stir in the cream, if desired. Serve in bowls with fresh bread or grilled cheese.
