Easy Tomato Soup – Meatless Monday
This easy tomato soup is flavourful, simple, and can be whipped together really quickly. Healthier and tastier than the canned stuff. Serve with fresh crusty bread, a baguette or grilled cheese.

Ingredients
- 1 28 oz can Whole tomatoes Use best quality
- 1 Medium Yellow onion Diced
- 2 Cloves garlic Minced
- 3 Tbsp Extra Virgin Olive Oil Use best quality
- 1.5 Tbsp Dry Basil
- 1 Tsp Dry Oregano
- 1/4 Cup Heavy Cream Optional
- Kosher Salt and Fresh Ground Black Pepper To taste
- 1 Cup Vegetable stock Low sodium or homemade

Instructions
- In a medium to large pot, on medium heat, add the olive oil garlic and onion. Cook, stirring, until the onion is translucent.
- Add the tomatoes and the stock. Simmer 10 minutes, crush tomatoes with a wooden spoon or potato masher.
- Simmer 5 more minutes. Using an immersion blender, purée soup until smooth. You can alternatively use a food processor or blender.
- Add the herbs, salt and pepper. Stir, simmer for 5 minutes and then taste. Adjust the seasoning to your liking.
- Stir in the cream, if desired. Serve in bowls with fresh bread or grilled cheese.
